TANSŌ Unveils 'Daichi' Seasonal Programme Celebrating Local Ingredients

DUBAI, UAE — TANSŌ, an innovative chef-led dining gallery located in Jumeirah 1, has launched 'Daichi' as part of its seasonal programme. This initiative explores limited expressions of contemporary Japanese cooking through the lens of local ingredients, emphasizing a connection with the Gulf region.

The term 'Daichi' translates to 'earth' or 'land', marking the first volume in TANSŌ's new series. Rather than sourcing traditional Japanese ingredients from distant origins, the restaurant focuses on collaborating with local farmers, fishermen, and producers who contribute to the Gulf's unique culinary landscape. This approach highlights what contemporary Japanese cuisine looks like when firmly rooted in regional context and resources.

TANSŌ aims to elevate the use of Gulf ingredients by applying Japanese culinary techniques and flavors. The 'Daichi' menu features six distinct dishes, each inspired by the diverse landscapes of the region. Highlights include 'Root', which combines barbeer, fig, and candied walnuts dressed in a sansho vinaigrette; 'Coast', featuring Gulf hammour paired with yuzu miso beurre blanc and leek ash oil; 'Gulf', showcasing Omani lobster with dashi mayo and charred lemon; and 'Palm', which presents Medjool date and Booza ashta complemented by tonka and miso caramel.

“We weren't interested in creating a menu about Japan from thousands of kilometres away,” said Executive Chef Ricardo Bojador. “The more interesting question was what happens when Japanese technique engages directly with the ingredients and realities around us. Daichi became our way of exploring that.”

This inaugural volume will be available until summer 2026, with individual dishes priced between AED 42 and AED 162. TANSŌ plans to expand its seasonal offerings, responding dynamically to the availability of ingredients and the context in which they are presented, with future themes yet to be disclosed.
