Noren is set to open at the end of the month in Jumeirah Lakes Towers (JLT), marking a new chapter for founders Ilir Caushi and Pawel Kazanowski. The duo, who previously contributed to the worldwide success of Zuma, aim to fill a gap in Dubai's dining scene with a restaurant that embodies a straightforward approach to dining.
The restaurant, named after the traditional Japanese fabric curtain, is designed to be integrated into everyday life, welcoming guests for anything from a casual drink to a full tasting menu. Noren offers a diverse range of culinary options, featuring dishes such as thinly sliced chutoro with jalapeño dressing and grilled tuna steak with wafu sauce. A central island bar will provide a selection of signature cocktails alongside a rich sake menu.
“One of the most rewarding parts of this project has been defining what Noren is,” says Ilir Caushi, Co-Founder. “The answer became incredibly simple: it's just a restaurant. That might sound obvious, but we realised that's exactly what we were searching for. A restaurant for every occasion, or no occasion at all.”
Designed with a clean and contemporary aesthetic, Noren incorporates natural materials that foster a warm atmosphere. The layout features an open kitchen and sushi bar that brings the culinary experience to the forefront. Pawel explains, “We take the food seriously, but eating should be about enjoyment. A lot of thought goes into every dish, from the ingredients we choose to how we treat them. But when it reaches the table, it should feel effortless. Simple, honest food that makes you want another bite.”
The choice to establish the restaurant in JLT aligns with its rising independent food scene and a strong local community. The founders envision Noren not as a destination restaurant, but as a place that integrates seamlessly into the weekly routines of its guests. With years of global experience, Noren's focus remains firmly on delivering exceptional food, genuine hospitality, and creating a welcoming environment for all.
