On February 28, diners in Dubai will have the unique opportunity to indulge in a prestigious culinary experience as Chef Vikas Khanna returns to Kinara at JA Lake View Hotel for an exclusive one-night-only event. This gastronomic occasion is part of the Forgotten Flavours series, showcasing time-honoured recipes from India's royal kitchens.
The special event will feature a meticulously crafted six-course tasting menu, designed to revive royal recipes through a contemporary lens. Each dish will be thoughtfully paired with selections from Sula Wines. "Based on the culinary artistry that flourished in India’s royal households, this event pays homage to the history and tradition of Indian cuisine," Chef Khanna shared.
Guests can expect dishes like the Rathore’s 100 Layer Potatoes with Ker Sangri pickle, and the Kashmiri Nadroo Tikki filled with apricot, complemented by yakhni sauce and lotus root chips. The evening will also feature the Awadhi Galouti Kebab, decorated with delicate gold leaf, paired with Sula Shiraz, along with main courses such as Royal Bengal Rizala Murgh or Chennar Kalia served with traditional breads. The dessert will include the Odia royal Chenna Poda, concluding a meal steeped in history and flavor.
Following its inaugural event, ‘Utsav – Festivals of India’, the Forgotten Flavours series aims to explore India’s lesser-known culinary traditions. The evening at Kinara promises an immersive experience with elegant interiors, aromatic spices, and the storytelling element inherent in Khanna's culinary approach, fostering an environment of grandeur and intimacy.
This special dining event will take place from 7 PM to 11 PM at Kinara by Vikas Khanna, located within the JA Lake View Hotel. The ticket price is AED 850. Reservations are recommended due to limited seating.
